The results of stage I indicated that there was a significant interaction (p <0.05) between the dose of additional sugar and the fermentation time to the pH, total acid, and total lab, but there was no interaction (p> 0.05) between the dose of additional sugar and time fermentation of water content. The results of phase II showed that the addition of sauerkraut fluid in drinking water had a significant effect (p <0.05) on duck performance and had no significant effect (P> 0.05) on the quality of duck meat.

The results of this study indicate that the addition of sauerkraut fluid can be a good alternative to improve the performance of Peking ducks without sacrificing the quality of the meat.
